Sam Homan - Head Chef
After completing his apprenticeship in Perth, Sam combined this love of fine-dining with a passion for travel before returning to Australia to join the team at Vue de monde. Under the tutelage of Shannon Bennett and Justin James, he worked his way up to senior sous chef before taking the Head Chef role at Iki-jime.
Justin James - Executive Chef
To me food shows everything. You can’t hide bad cooking. That’s why I am fascinated with what I do. I was raised outside the hills of Detroit, Michigan and started as a busboy when I was 16.
Within two weeks I was transferred into the kitchen. Early on I was trained back to back by two Maîtres Cuisiniers de France, after that I traveled throughout the States exploring different styles of food and ended up at Eleven Madison Park, where I will never forget my time.
Ben John - Sous Chef
Ben’s passion for seafood began early with an apprenticeship at Auckland Hilton’s seafood restaurant; Fish. Travel brought him to Melbourne and, eventually, Vue de monde. Ben later took a role at London’s Ledbury before returning to Melbourne as Sous Chef at Iki-jime, where the passion is seafood.
David Wilson - Manager
David has over 20 years experience in the hospitality industry ranging from acclaimed restaurants to 5 star hotels, with nearly half of that with the Vue Group. David has a passion for food, wine and service. Over the past 10 years of working with the group, David’s most exciting project to date is Iki jime.
Remi Craquelin - Head Sommelier
From a young age Remi was exposed to Hospitality with his father being a well established Chef in France. After completing a hospitality degree Remi was offered the head sommelier role in a Michelin starred restaurant in Paris. After gaining three years of experience he decided to move to Australia where he joined the Bistro Vue team and learnt about Australian produce and cuisine. This year Remi achieved his advanced sommelier certificate which was a great step forward for his career and inspired him for his new role as head sommelier of Iki-Jime.
